How does a small kitchen safely serve a family with a peanut and dairy allergy every week?

Allergen segregation is scheduling, storage and cleaning more than it is recipes. How working kitchens sequence production, verify labels and communicate risk to a repeat allergy household.

You can serve that household safely every week, and the thing that makes it work is not a recipe. It is a calendar. A kitchen that cooks the peanut free and dairy free meals first, on a wet cleaned line, with tools that never touch a jar of peanut butter or a block of butter, is running a real control. A kitchen that cooks them last and wipes down in between is running a hope.

Allergen management in a small production kitchen comes down to four questions asked in order. What allergens are in my standing menu at all? When in the week does each one get touched? What physical equipment carries residue between batches? And what am I telling this customer in writing about the limits of what I control?

None of that requires a second kitchen or a certified allergen room. It requires you to decide the order of your production day before you start it, and to write down what you decided.

Mapping the nine major allergens across your standing menu

US labeling law under FALCPA, expanded by the FASTER Act which added sesame effective January 1, 2023, recognizes nine major food allergens: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Those are the nine you build your grid around, because those are the ones your suppliers are legally required to declare on their labels.

Build the grid once. Rows are your recipes, all of them. Columns are the nine allergens. Mark a cell if the allergen is present as an ingredient, and mark it differently if it is present only as a supplier declared cross contact risk.

Where the surprises usually hide

The obvious ones you already know. The ones that catch small kitchens are the components rather than the headline proteins.

  • Worcestershire sauce contains anchovy, which is fish.
  • Most commercial chicken broth and bouillon bases contain soy, and many contain milk solids.
  • Tahini and many burger bun toppings are sesame, and since 2023 a number of bakers switched to adding sesame to everything rather than segregating it.
  • Ghee is a milk derivative. It is not dairy free, whatever the customer read online.

For a peanut and dairy household specifically, your two live risks are usually a Thai or satay style sauce, and butter or cream in a pan sauce, a mash, or a roasted vegetable finish. Both are easy to swap. Peanut goes to sunflower seed butter, and dairy goes to olive oil or a coconut cream base, though coconut is worth a conversation because some households treat it as a tree nut even though FDA classifies coconut as a tree nut for labeling purposes.

Production sequencing so allergen free meals run first

This is the control that does the most work for the least money. Cook allergen free at the start of the shift, on equipment that has been through a full wet clean since it last saw the allergen.

A workable weekly shape for a kitchen running two cook days looks like this.

The rule underneath the table is simple enough to say out loud to a new helper: nothing with peanut or dairy ever runs before something without it, on the same day, on the same surface. If the schedule forces an exception, the exception is a full wet clean, not a wipe.

Dedicated tools, color coding and separate storage zones

Color coding for allergens is not a legal requirement in a US retail food establishment. It is borrowed from manufacturing, and it works because it removes judgment from a tired person at 4pm.

Purple is the widely recognized allergen color in commercial food equipment lines, so purple boards, purple handled tongs and purple scoops read correctly to anyone who has worked in a larger operation. What matters more than the specific color is that the allergen free set is physically separate, stored separately, and washed separately.

The equipment that actually carries residue

Some items are far more likely to move protein between batches than others.

  • Scratched polyethylene cutting boards. Grooves hold protein through a wash.
  • Immersion blender shafts and the blade housing, which is very hard to clean without full disassembly.
  • Slicer blade guards and food pushers.
  • Cloth towels, which is the reason a lot of kitchens go to single use paper on allergen free blocks.
  • Shared oil in a fryer, which cannot be cleaned between batches at all.
  • Flour dust, which stays airborne for hours and settles on open containers on the other side of the room.

Storage follows the same physics. Allergen free ingredients live above allergen containing ones in the walk in and on the dry rack, never below.

Wet cleaning versus sanitizing and why alcohol wipes fall short

This is the point most small kitchens get wrong, and it is worth being precise about it.

Sanitizing kills microorganisms. Allergens are proteins, not organisms. A quat sanitizer at the correct concentration will pass a bacterial standard and leave peanut protein exactly where it was. Alcohol wipes and sanitizer spray do essentially nothing to an allergen, and hand sanitizer does nothing to peanut protein on hands.

What removes allergen protein is mechanical: hot water, detergent, friction, and a rinse that carries the residue away. Wash, rinse, sanitize, air dry, in that order, with actual scrubbing in the wash step. Hands get washed with soap and running water, not gelled.

If you want to verify rather than assume, commercial allergen swab test kits exist for specific proteins and cost a few dollars a swab. Running a handful on your worst equipment once a quarter, and keeping the results in a binder, converts a claim into a record. That record is what you would want if a customer ever reported a reaction.

Supplier specification sheets and reading may contain statements

Your allergen grid is only as good as the documents behind it. For every ingredient you buy, ask the distributor for the product specification sheet, sometimes called a spec sheet or a product information form. It lists declared allergens and, usually, the manufacturer's statement about the facility and the shared lines.

Advisory labeling is where judgment enters. Phrases like "may contain peanuts", "processed in a facility that also processes milk" and "manufactured on shared equipment" are voluntary in the United States. There is no legal standard defining them, no required threshold behind them, and no requirement that a manufacturer use one even when a real risk exists. Absence of the statement is not evidence of absence of risk.

Practically, that means two rules. First, treat an advisory statement as a disqualifier for a customer with a diagnosed allergy, and find a different supplier for that item. Second, re-pull spec sheets when a manufacturer changes packaging, because reformulation happens quietly and the pallet you got in March may not match the pallet you get in September. What to promise a customer in writing and what never to promise

Be generous with detail and stingy with absolutes. The sentence that gets kitchens in trouble is "our meals are peanut free."

Promise what you control:

  • Named ingredients in every meal, with the allergen list stated plainly, not buried.
  • The production sequence you run and where their meals sit in it.
  • Dedicated tools and separate storage for their batch.
  • That you will notify them before any recipe or supplier change affecting their allergens.

State what you do not control: a shared kitchen space, ingredients produced in facilities that also handle these allergens, and the fact that you are not an allergen free certified manufacturing facility. Put that in the onboarding email and on the label, and ask the customer to confirm they have read it.

Then be specific about the household. A peanut and dairy allergy in one family may cover two different children with different severities. Ask whether it is IgE mediated with an epinephrine prescription, or an intolerance. Ask about baked milk tolerance, which is common and which changes what you can offer. Ask about coconut, sesame and soy separately, since those often travel with the same household.

Handling a reaction report: documentation and follow up

If a customer calls and says a child reacted after eating one of your meals, your first job is care and your second is preservation of evidence.

  1. Ask whether anyone needs medical attention right now, and say so first.
  2. Ask them to keep the container, the label and any uneaten food, sealed, in the freezer.
  3. Record the meal name, the batch or production date, the delivery date, symptoms and the time between eating and onset.
  4. Pull your production record for that batch: sequence position, who cooked it, which tools, which supplier lots.
  5. Hold remaining inventory from that batch. Do not sell it while you are investigating.
  6. Check whether the same lot of any ingredient went into other meals that week.
  7. Call your supplier and ask about recalls or formulation changes on the suspect ingredient.
  8. Write the customer a factual account of what you found and what you changed, and notify your insurer if the reaction required treatment.

Do not speculate about cause in writing before you have finished the investigation, and do not tell a parent it could not have been your food. Sometimes it was not. Sometimes a spec sheet changed under you. The record is what tells the difference.

Turning the plan into the week

Everything above is a system, and systems break when they live in your head. The grid has to attach to the recipes, the recipes to the week's orders, and the pick list going out to the floor has to carry the allergen flags with it.
